The dog days of summer have arrived. And when the temperatures heat up, I’m less inclined to heat up my kitchen, so we eat a lot of chilled salads and sandwiches and entrees fresh off the grill. But my favorite summer recipe of all time is this refreshing beverage, guaranteed to cool you off on the hottest days.
This is such a simple concoction to prepare, just leave adequate time for it to chill.
Here’s the formula:
- 1 lemon, thinly sliced
- 1/3 of a cucumber, thinly sliced
- 12 mint leaves
- 2 tsp grated ginger
Layer the cucumber and lemon slices and mint leaves in the bottom of a pitcher. Add the ginger and fill up the pitcher with water. Refrigerate overnight to thoroughly chill and let the contents “steep”.
It even looks summery, doesn’t it? I prepared this in a large beverage server for our Fourth of July celebration and it was a huge hit! There has been a pitcher of this in my fridge ever since… such a nice change from regular ‘ole water.
