Spring Brunch for Mother’s Day

Karen Cooper

I am a mom and, to me, the best part of Mother’s Day is not having to cook! My kids and husband usually make me breakfast, so I make sure they have easy-to-follow recipes that are a little fancy! If you want something beyond toast, here are some great recipes for a spring brunch – for Mother’s Day or any other occasion.

Every brunch needs an egg dish, and Eggs Benedict is a classic. Check out this twist on the traditional version:

The smoked salmon and avocado are bright flavors that are perfect for a spring brunch.

What about something a little more petite?

These mini-quiches can be made ahead, and you can use any vegetables you have on hand. They even freeze well, so you could enjoy them during the week, too.

For a sweeter brunch, try a waffle bar.

An assortment of fruit, toppings, and syrups means that everyone can have what they want. And the toppings can be prepared ahead of time.

Lemon always reminds me of spring.

Last, but not least, a Mother’s Day brunch needs a festive beverage.
